The first time I visited Flip in summer 2009 I never made it to the table.  It was a Saturday, my group was told of the 2.5-hour wait, and given our collective hunger we beelined for another restaurant.  Fast forward to last night--another Saturday night--a slight improvement to a 1.5-hour wait, but this time we were determined. We grabbed a couple beers to pass the time and in between conversation watched MTV2 on plasma screens mounted under ornate portrait frames.  Loud, mainly electronic music made conversation a little tough but keeps the energy high.  The narrow lobby and bar area were shoulder-to-shoulder our entire wait.  It was not uncommon to be bumped by staff and patrons as they entered and exited the dining room.  Patience, my friends. At long last, we were seated at the chef's table.  The chef's table is a smaller bar in the back of the restaurant, facing the kitchen and prep area in the foreground.  It was fascinating to watch the speed with which entrees were prepared, in contrast to the time spent waiting for them.  Let's face it, though, seating isn't abundant and we found the food to be worth the wait. We shared three sides--fried pickles with buttermilk ranch (4/5), jalapeno slaw (3.5/5) and tempura-fried rutabaga with red pepper jam (5/5).  For entrees, I ordered the butcher's cut burger with blue cheese and carmelized onion--wow--and my dining companion ordered the Korean BBQ burger and practically inhaled it.  Our service was friendly and attentive. The gravy, if you will, was our shakes.  The Nutella shake with burnt marshmallows was heavenly.  The Turtle shake was sugar coma-inducing, being much sweeter due to the caramel, but still delicious. While Flip is worth the wait, a weeknight may be better if time isn't on your side.  If you do visit on the weekend, a friend suggested holding out until 9 p.m. or so (we arrived during prime-time, 7:30-ish) to take advantage of reduced wait time.  Wait or not, we'll be back.

This place is great! They were playing house music all night long! The crowd was mixed which I love! The decor was cool! We came here for my homegirl's birthday and got VIP service! She works for Temple night club so she got the hookup here tonight! We were all crazy last night! It was great seeing some old friend and making new ones! There were 2 bottles of Kettle One vodka on ice when we arrived. I made sure I took advantage of the alcohol! I made myslef a few vodka tonics and a few vodka cranberries throughout the night! I even had some chick at the next table make me a grey goose tonic for me at the next table! I had an awesome time last night and will probably come back!

If you go on a good night this place is fun as all get out. So much fun that I tend to blackout before I leave the bar at 4am. Cover is a bitch. But there being 3 different bars to order drinks from, and two different rooms with sound, makes up for a few downfalls. Mashup nights(Booty) are fun, except the crowds that it draws (((marina))). 80's night was alright. Pop-Rox was a blast to dance at! Basically look up their calendar before you decide to go there.
