So, Flip Burger was better than I thought it was going to be. And the interior wasn't quite what I expected. It was better than I expected, actually. I was out running some errands, so I stopped in. There was a wait of about 10 minutes when I got there, but fortunately there were a few empty places at the bar. So, I elbowed into a spot close to the host station end of the bar. I will say that the layout of the tables in the middle and the ample bar space kinda made it look/feel like a burger assembly line or conveyor belt. The tables in the middle were close together which reminded me of the seating at Pure Taqueria. Anyway, my service at the bar was prompt, and courteous. The food was delish. I ordered the Butcher's cut with carmelized onions, blue cheese and jam. I liked the taste combo, as I've never had jam on a burger. There actually could've been a little more as the blue cheese began to dominate by the last few bites. The hand cut fries were a nice compliment to such a juicy and tasty burger. As a treat, I ordered the Nutella and Burned Marshmallows shake. Funny thing, I didn't so much distinguish the Nutella in this shake. But it was good. And now I know that I don't like burned marshmallows in a shake. Actually, I didn't like burned marshmallows before I ordered the shake, but I thought I'd be adventurous. And finally, here's how I know for sure that Flip Burger's Butcher's cut burger was one of the best I've had so far: I didn't remove a single topping from the burger. Yep. You see, usually I'm a picky eater and basically remove all the garden from a burger, especially the onions. But this day, I squared my shoulders, puffed out my chest, lifted my head and courageously faced the burger. I dared myself to experience the chef's creation as intended. I was pleasantly surprised and enchanted by the textures and flavors. Of course, this also means I'm a grown up now.

Good spot for a rendezvous with a small group. Inside looks like Great Aunt Betty from Odessa's living room with apparently every miniature mounted faux game head in the city displayed on the back wall. You can get El Gringo's soups and at least some of the salads in addition to the appetizer menu delivered with your tasty libations. Getting more crowded lately even during our humpday happy hour. Grab some pleather and a goblet o'dos equis and enjoy yourself.
